“Diet” Knock Off Chipotle Barbacoa Burrito

First off–Happy Birthday to my husband.

If you have been following my facebook page you know I have been on a life style change and the pounds have been falling off. I haven’t had to give up all of my favorite foods but sometimes I have to make some adjustment. Those adjustments are well worth it because I still get to enjoy my favorites while staying on plan and it is working.  The original idea for this recipe came from Six Sisters Stuff–my meat was modified (from their recipe) to fit the plan that I am on.  I have been on my new lifestyle plan for 5 and a 1/2 weeks and I have lost 18.8 pounds as of yesterday. I have dropped 9 and 1/2 inches and 3 pant sizes in the first 4 weeks–so this is working for me. I will say I put DIET on the recipe but I do not really feel like I am on a diet. I’m not hungry, I get to eat tasty meals and the weight is coming off so easily that it is not work at all.

Barbacoa Beef
Serves 6
Per serving:One Lean protein and 3 condiments
Ingredients:
3 lbs london broil, all fat trimmed
4 cloves garlic
2 tablespoons dried onion
2 teaspoons lime juice
2 tablespoons chopped chipotles in adobo sauce
1 teaspoon ground cumin
1 teaspoon ground oregano
1/2 teaspoon ground cloves
1/4 teaspoon salt
1/2 teaspoon pepper
2 bay leaves
1 teaspoon olive oil
1 cup water
Directions:
Place garlic, lime juice, cumin, oregano, chipotles, and cloves in a food processor and chop together.
Trim fat from meat. Cut meat into 4 large chunks, add salt and pepper. Sear meat in hot skillet with 1 teaspoon oil, just until browned on all sides.
Remove meat from skillet and place in crock pot. Add water, liquefied spices, onion and bay leaves. Simmer on low for about 4-5 hrs, or until tender.
Once cooked and the meat is tender, remove the meat from the crock pot to shred. (Leave all the juices in the pot.) Return the shredded meat to the pot, add some more salt and cumin to taste (you will want to add more), and stir into the juices. Simmer, uncovered, for about 10 minutes to let the flavors penetrate.

FAUX FLOUR TORTILLA (per person)
My family used regular flour tortillas so I only made enough of the Faux Flour Tortilla for me.
1/2 cup raw grated cauliflower or 100 grams (2 Greens)
1/8 cup egg substitute * you are able to add up to 2 oz of additional protein per Nutrition Support
1/3 cup shredded or 4 oz 2% light mozzarella, divided (1 Lean)
I grind everything up in the blender or food processor. Spread it out over a piece of parchment paper and bake at 400 for 20 min.
Flip it over onto another piece of parchment paper and cook for another 20-25 min.

Top meat with
with 1/2 cup of lettuce
1 oz of cheese
and a little rotel (or blend it to resemble salsa)

My family ate their meat wrapped in a flour tortilla with cilantro line rice that I cooked, black beans, corn and guacamole and sour cream. I left those things off of mine food and it was quite tasty and totally on plan.

These look so yummy Cheri! I love Burrito’s and they don’t look ‘diet’ at all!
