Yesterday was a busy day. Our little girl was sick and Wed. are my client call day so it was a busy day so it was a PAPER PLATE KIND OF NIGHT.
I love that we can eat healthy and lose weight.
*************TACO SALAD**************
**2 cups of lettuce– I weighed mine on the scale using our vegetable conversion chart
**5.5 oz of buffalo meat (you can also use 98-99% lean turkey meat)
**1.5 oz of 2 % cheese
**2 Tbsp of guacamole for the fat
1/4 cup of homemade salsa (below)
*************Homemade Salsa: (Approved by Nutrition Support)*************
1 — 29 oz can of GREAT VALUE (walmart) tomato sauce (carbs 4 g)
1 –28 oz can of Rotel (carbs 5g)
1 Tablespoon of garlic
2 Tbsp of lime juice
1 tsp salt
1 bundle of fresh cilantro (about 1 Cup)
Pulse in a blender and serve over taco salad
Per ½ cup serving is one optional snack, ½ of a vegetable serving and ¾ of a condiment.
