Celebrate the Holidays got messed up so it is still up for posting since Mcklinky wasn’t on it till last night.

I don’t know how this switched, when I left the library it was the most recent post and now it is the 2nd one down—-so now it is the most recent again so you gals know who the winners are.

Thank you so much for your participation in the Ad Campaign and the Give-A-Way. It is my goal to make this the funnest blog on the block. I hope each of our guests that offered a gift item as well as my readers and those who have come by for the very first time have had a fun week and will continue to come back.

I will list each winner and I need you to e-mail me so I can put you in touch with that vendor so you can claim your prize. Then I have a YUMMY recipe of mine (just typing it up makes me want to make a pot) and some fun pictures to enjoy.

White Chili

1 lb Northern White Beans (canned or dried) I go with canned because it is quick and easier

6 Cups Chicken Broth

2 cloves of garlic, minced or pressed

2 medium onions, chopped and divided in 1/2

1 Tbsp oil

2 4oz cans of green chilis, chopped

2 tsp ground cumin

1 1/2 tsp dried oregano

1/4 tsp cayenne pepper

4 Cups diced, cooked chicken breast

3 Cups grated monterey jack cheese

1/4 tsp ground cloves

Combine the beans, broth, garlic and 1/2 of the onions in a large soup pot, bring to a boil and reduce the heat. Simmer until the beans are: tender for dried beans (about 3 hours) or warmed completely with canned beans( about 30 min.). If you need to add more chicken broth do so.

In a skillet saute the remaining onions in oil till tender. Add in the chilis and seasonings, mixing thoroughly. Saute the diced chicken until cook thoroughly, adding additional oil if needed, then add to the bean mixture.

Continue to simmer for an hour to incorporate all of the flavors.

Serve with cheese.

Optional Garnishes:

Tortilla chips, green onion-chopped, tomato, guacamole, salsa, sour cream.
