Homemade Strawberry Sorbet
This recipe is our absolute FAVORITE. It is so light and refreshing on a HOT summer day.
It is also a very affordable ice cream to make and you usually have all the ingredients on hand, making it the perfect treat. Because of the fruit and lemon I call it a sherbet or sorbet.
SORBET
6 Cups of Milk
3 Cups of Sugar
1/4 tsp Salt
3 1/2 Cups of Pureed fruit (our favorites are peach and strawberry)
8 Tablespoons of Lemon Juice
That’s it for the list of ingredients.
In a large bowl, mix together the Milk, Sugar and salt. Once mixed, add the lemon juice to the milk mixture and let it “curdle” while you prepare the fruit. Puree your fruit in a blender, then add all the ingredients together and pour into your ice cream tub. Place the enclosed tub into the ice cream maker, layer ice and rock salt, lock it in place and turn on your machine. Once done you can either leave it in the ice till time to serve or place in the freezer. If you are serving it a little later, pull it out of the freezer a little earlier so it has time to soften up a little so you can scoop it. It freezes up more solid than store bought ice cream.
Our 2 favorite fruits are Strawberries and Peaches–IN SEASON. You could make this with a variety of in season fruits or take out the lemon juice and try chocolate or a coffee.

Love this…I posted homemade ice cream once…not recipe, just that I had made strawberry…You wouldn’t believe how few people have ever made it. I have been on a home made ice cream kick this summer…no not good for the waist line. I will add these to our list….sounds great.

Sometimes I add more lemon and it makes it more like a sorbet. We all love it because it is so light and refreshing. We are from Missouri and it gets hot and humid in the summers. Right now we are in Florida and it is almost always hot and humid, so light and refreshing is so much more appealing than a heavy cream recipe.

My friend just shared her “recipe” for orange sherbet. So easy and very yummy. All you need is 1 can Eagle Brand and 1 liter of orange soda. Mix those together and let the ice cream maker do its work. And best of all–you can use low fat Eagle Brand and diet soda and the taste is the same!
