When in Kansas City we love going to a restaurant on the Country Club Plaza called the Baja 600. They make guacamole right at your table. I watched the gal and everything she put into it and decided I can make that. It is to die for. My little ones call it Rock n Rolly Guacamole and that name has stuck around our house.
Rock n Rolly GUACAMOLE
3Avocados
Fresh Cilantro
tomato
onion
garlic
jalapeno
salt to taste
food grinder
I peel and cut up the avocados and place some in the grinder with a little onion, tomaotoe, garlic, jalapeno, and cilantro.
A couple of the “batches” I blend until they are smooth but some I leave a little chunkier.
I add in according to taste. We like a lot of garlic and cilantro in ours.
Jalapenos bite varies from one jalapeno to the next. Some are so mild they taste like a bell pepper while others are so spicy you only want a little of the jalapeno added in.
Everyone raves about my Rock n Rolly GUACAMOLE–try some it is yummy.
Serve with tortilla chips.
Note–if the jalapeno is spicy the longer it sits the spicier it gets. Also to keep you Guacamole from turning brown, put the avocado seed back into your dish with your guacamole to keep it a pretty green color.
The name came from my kiddos–when Miss G4 was only a year old she loved it and called it Rock n Rolly and so the name stuck and now our family calls it Rock n Rolly Guacamole.
