You will need:
2 lbs of ground beef
1 & 1/3 Cups chopped tomato
2 Cup chpopped onion
2 Cup pitted black olives
2 Cup green olives, chopped
2 Tbsp chili powder
1 tsp salt
1 tsp pepper
1 & 1/2 Cup corn meal
1/2 Cup flour
1 tsp baking powder
2 Cups HOT WATER (not boiling)
4 Tbsp butter-melted
4 Cups shredded cheddar cheese
{optional: Garnish with extra black and green olives, tomatoes and onion}
DIRECTIONS:
1. Preheat oven to 400 degrees. Brown your meat , drain (if nyou use a high fat content meet). Add in 1 and 1/3 Cup of chopped tomato (I prefer grape tomato), 2 cups of chopped onion, 1 Cup black olives-chopped, 1 Cup green olives-chopped, 2 Tbsp. chili powder, 1/2 tsp salt, 1 tsp pepper, and cook till the onions are tender.
2. In a mixing bowl combine: Cornmeal, flour, baking powder, 1/2 tsp salt. Add in the butter and Hot TAP water till blended. Stir in 2 Cups of shredded cheese, 1 Cup of black olives and 1 Cup of green olives.
3. Spray a 9 x 13 baking dish with PAM. Spread the Cornmeal mixture into your 9 x 13 pan.
4. Pour the meat mixture on top of the cornmeal and press it down, gently leaving a small edge around both ends and the sides. Top with 2 Cups of shredded cheddar cheese and BAKE.
While the Amigo Pie is baking I chopped up additional tomato, onion, black and green olives for a garnish.
