
Pumpkin Muffins
We like making mini muffins. We then put them in a large ziplock plastic bag and they get more moist the next morning.
This time I made a combination of mini muffins, medium muffins and pumpkin bread.
3 Cups of sugar
4 eggs
1 Tbsp cinnamon
2/3 Cup water
3 1/2 C of flour
2 tsp soda
1 Cup oil
2 Cups of pumpkin (not the thin pumpkin pie mix but just pumpkin)
1/2 tsp. salt
Add dry ingredients together. Add in eggs, water, oil and pumpkin. Once all ingredients are mixed well (I grab the electric mixer to mix this up) you will pour into PAM spayed muffin tins. Bake at 350 degrees for 12 min. (times may vary depending on your oven).
If you do bread bake for 1 and 1/2 hours. In a 9 x 13 pan it takes about 1 hour.
This is a recipe my kids beg for me to make ALL year long. When I mentioned I was thinking about making pumpkin muffins they all very quickly said “yes!! yes!! yes!!”

This is the most MOIST recipe–we just love it. My mom had brought the kids some pumpkin muffins–from a party she had gone to–they were not impressed with the bakery muffins and there in began the request for REAL pumpkin muffins.
