The “Trick” To Fluffy Pancakes

My kiddos were asking me to make homemade pancakes last night as I was putting everyone to bed. So I got up and mixed up the batter and served them up some nice fluffy pancakes.

Some like it hot — Some like it cold…How do you like your syrup?

Cheri’s Homemade PANCAKES

This recipe makes around 10 pancakes

1 egg

1 and  1/4 Cup Buttermilk (if you don’t have buttermilk use 1 cup of milk)

2 Tablespoon canola oil (I used my coconut oil and the kids said they were the best pancakes I had ever made)

1 and 1/4 Cups of flour

3 Tablespoon sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

Mix all of your ingredients together till well blended.  Heat up a griddle.  (I like a griddle because you don’t have to use any oil to cook the pancakes.)

The trick to good pancakes is putting them on the hot griddle and then leaving them alone until they get all bubbly.

Follow Me on Pinterest (the oils that you see around the edges of the pancakes are from the coconut oil that was mixed into the mix.  I did not add any to the griddle.)

Once they are bubbly you can easily flip them without any mess, let them cook up for a couple of minutes on the flip side, butter and serve.
