Hot ‘n Honey’d Chicken

I have my sweet sister Jennifer to thank for this yummy dish.

4 Chicken Breasts

3/4 Cup picante sauce

2/3 Cup honey

1/3 Cup soy sauce

1/4 Cup dijon style mustard

3 Tbsp. Canola Oil

optional —

2 Tbsp grated ginger

1/2 tsp grated orange rind

Spray 9 x 13pan with PAM.  Place chicken in the pan–you can cut the chicken in strips or cubes–DO NOT SALT THE CHICKEN or it will be too salty.

Mix all of the ingredients together and pour over the chicken to marinade it.  Marinade for 6 hours.

Bake at 400 degrees for 45 min to an hour.

RED HOT JELLO

2 small boxes (or 1 large) of Lemon Jello

1 & 1/2 boxes of RED HOT Candies

2 Cups of water

2 Cups of applesauce

1 Tbsp of fresh squeezed lemon juice

Dissolve the RED HOT candies in the water for about 20-30 minutes then once they have partially dissolved bring the RED HOT mixture to a boil.

Place the Jello mix into a bowl and pour the boiling RED HOT sauce over the Jello.  Stir for 2 minutes until completely dissolved.  Stir in the applesauce and lemon juice.
Chill for a couple of hours.

Baked Oranges

Cut up 4 oranges in half and place in a 9 x 9 baking dish.  Top each orange with a heaping tablespoon of brown sugar and bake for 15 minutes.  Take them out of the oven and drizzle with 2 Tbsp of butter and sprinkle with cinnamon.  Return to the oven for another 10 minutes.

Serve this meal with a Spinach Salad and Long Grain Rice.

The chicken is so tender and yummy. The RED HOT JELLO is super yummy too. I will definitely do the baked oranges again.
