German Chocolate Chip Pancakes
My kiddos are always asking for “special orders”. Do you ever get that?
The other day I was going to make pancakes. One child wanted PLAIN, another wanted Chocolate Chip and 2 wanted both Chocolate Chip and German-Chocolate Chip Pnacakes.
I mixed up my batter: (I have a family of 6, you can cut the recipe in half if you want to make less)
MAIN INGREDIENTS:
2 eggs
2 1/2 Cups of Buttermilk (if you don’t have buttermilk you can mix a Tablespoon of vinegar or lemon juice to curdle the milk)
4 Tbsp. (Tablespoons) of Coconut Oil
1 tsp almond extract
1 tsp of coconut extract
2 1/2 Cups of Flour
2 tsp (teaspoons) baking powder
1 tsp baking soda
3/4 tsp salt
ALSO you will need these EXTRA Ingredients:
1/2 cup of miniature chocolate chips
3/4 cup of shredded coconut
Mix all of MAIN ingredients. I use my KitchenAid mixer but you can just also use a hand mixer.
I made about 5 plain pancakes.
Next I added in my Chocolate Chips and made 8 of these pancakes.
Next I mixed in my shredded coconut and made the remaining pancakes out of this batter.
I like to use a griddle. There is no need for any extra oils of vegetable oil spray. The coconut oil in the batter is enough to keep them from sticking.
When it is time to serve them up I drizzle Caramel (ice cream topping) and a few chopped pecans on top.
