A piece went out on our air conditioner this past Thursday.  The piece had been ordered and was to be installed Monday so I went grocery shopping.  We had been eating out or eating sandwiches (no cooking to heat up the house) and we were all ready for some homemade meals.  I bought all my meats, fruit and veggies… My kids love bananas but something about being hot just makes you not want to eat.

WELL–the wrong AC part got ordered and my poor bananas went brown fast.  We do have a temporary unit installed now, until the part gets here (another 7-10 days) .

My hubby looked at me last night and said “I think you need to make some banana nut bread”.  Then I got the brilliant idea to create a soft bread like cookie that would be super moist and super yummy.  These are a home run.  They are so soft and moist but you have the convenience of eating a cookie.  When all 4 kiddos and the hubs give them a thumbs up I know they are good.

Banana Nut (bread) Cookies

3 large OVER-RIPENED bananas

1 & 1/2 Cups of brown sugar

1/2 Cup of white sugar

1 egg

2 tsp vanilla

3/4 C milk

1 stick of butter melted

6 Cups of flour

1 tsp baking soda

1 tsp baking powder

1/2 tsp salt

1 tsp. cinnamon

1 & 1/2  Cup of Walnuts or Pecans

Preheat oven to 350 degrees.

I peeled my bananas and dropped them into my KitchenAid along with the brown sugar, white sugar, egg, vanilla and milk and blended until it was smooth.  I added in the flour, baking powder, baking soda, salt and cinnamon and blended till completely blended.  I folded in the chopped nuts.

I sprayed my insulated cookie sheets with vegetable spray and placed a tablespoon of dough onto the cookie sheet and baked for 13 minutes.  Once you take them out of the oven remove them from the cookie sheet immediately.

I still had several over-ripe bananas and since we don’t like to eat them this ripe I do what I always do with extra over-ripe bananas.  I peel them and thrown them in whole, into a zip lock bag and freeze them.  Next time you want my Banana Nut bread Cookies you just pull out 3 whole bananas (or halves if they break apart), let them thaw and you are ready to have some super yummy cookies.

I love these cookie sheets by Airbake. They bake so evenly and everything bakes to a beautiful golden brown.  I have had mine for years and they are wonderful.

I have a recipe for this from the 1960’s that my childhood friends mom use to make us. It is similar to yours but if you are interested email me.
