Homemade Cream Cheese Peach Turnovers
I know many of you are in the back to school routine, like we are. Not only are you getting the kids ready with back to school supplies, new clothes but there is also school lunches and after school snacks to think about.
My Shopping cart — always more than I plan on getting when I leave.
I headed to my local Walmart to grab some items for dinner and to try out a new recipe I created (in my mind). My after school snack was going to include those Del Monte diced Peaches in Cinnamon and Brown Sugar that you see in my cart, the other fruit cups were for the kids to enjoy. They loved the Mandarin Oranges, Diced Pears and Diced Peaches. I love providing the kids with healthy snack options–fruits and veggies are always a good thing.
I rolled out my Puff Pastry and filled it with my fruit compote and cream cheese mixture.
Homemade Cream Cheese Del Monte Peach Turnover
I folded them over, sealed them, brushed them with some butter then popped them in the oven.
Homemade Cream Cheese Peach Turnover- serves 8
My fruit compote recipe:
1 brick of cream cheese, softened
1 Cup of sugar
1 tsp of cinnamon
4 individual fruit cups-peaches in brown sugar and cinnamon, drained
1 tsp of corn starch with a 1/2 cup of water to dissolve the corn starch.
Puff pastries (I made 8 so I bought 2 boxes)
butter
DIRECTIONS:
Mix together the cream cheese, sugar, cinnamon, drained fruit (with mixer or in your KitchenAid). Put fruit mixture with dissolved corn starch into a pan and cook until it thickens. Thaw Puff Pastries over night but keep each of them in the refrigerator as you roll out the dough and make them. You do not want your dough to get gummy. Spoon the fruit compote in the center of the Puff Pastry, seal the edges, butter the top and bake at 350 for 20 minutes.
I drizzled some icing on each one. (A mixture of powdered sugar and a little milk.)
