Buffalo Chicken Bake

This recipe is on plan and helping me to lose weight.

Creamy Buffalo Chicken Bake

  • I wanted to note that this recipe uses a light ranch dressing and not a fat free one.

Serves 2

Ingredients:

14 oz raw, boneless, skinless chicken breasts – yields 9 oz cooked

2 oz or 1/2 cup 2% reduced fat cheddar cheese

1/4 cup Frank’s Hot Wings Sauce – 3 tbsp of this sauce is 1 Condiment approved by NS

1/4 cup Light Hidden Valley Ranch Dressing

2 tbsp reduced fat cream cheese

I served my chicken on top of 3 cups of spinach salad.  There was enough coating on the chicken that I did not need any salad dressing.

Directions:

Preheat oven to 350 degrees. Bake chicken breasts (no salt) for 30-35 minutes or until cooked. Remove chicken breasts from pan and chop the chicken into small pieces. Place chicken inside of a baking dish. Set aside.

In a small sauce pan, combine Frank’s Hot Wings Sauce, ranch dressing and cream cheese. Heat over medium high heat, stirring until cream cheese is completely melted. Once melted, pour the sauce mixture over chicken. Then top with low fat mozzarella cheese. Bake for an additional 10 minutes or until the cheese is melted.

Your recipe look delicious and healthy. But if you would have given some more information like nutrition calculation of your recipe than it would have become more helpful to those who want to lose weight.

The plan I am on does not count calories–just another thing I love about it so I don’t personally keep track of all of that. If someone does it would be pretty easy to calculate.
