Need a Recipe for that extra Ham

by CHERI on December 27, 2009

Tortellini Ala Fini
                                                                Serves 6
Cube up about 12oz. of  left over Ham
1-2 bags of cheese tortellini (depending on the serving size-enough to serve 6 people)
2 jars of Alfredo Sauce
1 small package of frozen peas
1 cup of sweet onion, chopped
fresh crushed garlic- 1/4 tsp or a couple of fresh gloves
Olive oil
Salt
In a large stock pot boil enough water for your tortellini.  Once the water has come to a boil add in the tortellini, a little olive oil (about a Tbsp) and some salt and cook according to the directions on the package.
Cube your pieces of ham into bite size pieces.
While the Tortellini is cooking, in a small frying pan cook the olive oil, onions and Ham till tender and lightly caramelized then add in the garlic, lightly salt and cook for another minute, allowing the garlic to flavor the ham, onions and olive oil but not burning the garlic, then set aside.
Drain the tortellini and poor a little olive oil in the bottom of the stock pot.  Once drained add in the tortellini, and toss to cover with the olive oil to keep it from sticking together.  Add in the ham mixture and enough Alfredo Sauce for 6 people.  Gently fold in the frozen peas.  Serve with a Salad and some bread sticks and you have one quick, easy and delicious meal.

Hey thanks for the recipe Cheri. I have so much leftovers that I'm not cooking New Years if half of it ain't gone = )

Also figuring out why my stupid email doesn't send me ANY replies from any blogs. It use to send me replies, but not anymore. I keep trying to fix it, but it doesn't work still. Any suggestions??

This looks excellent, Cheri! In response to your font question, I found this AMAZING site KevinandAmanda.com. Here's the link to their Fonts for Peas, but they have TONS!

Careful… it's addicting! 🙂
