Polynesian Layered Salad

This is a super easy, and delicious meal. It is great for a party for several reasons. You can set it out cafeteria style, people can pick and choose what they want to put on their dish, you don’t have to keep the meat warm…the list goes on and on and it is DELICIOUS~~!!!

I cooked 3 chicken breasts and it was enough for 8 people and SERIOUSLY there was chicken left over.  Out of the 8 people only 2 were little kiddos.

3 Chicken breasts, boiled with salt and a little crushed garlic.  Reserve the broth for gravy. (When I have been in a huge hurry I have even grabbed a roasted whole chicken from the grocery store and made gravy from canned broth.) 

Make enough Minute Rice for the amount of people you will be serving.

3-4 celery stalks, chopped

1 bunch of green onion, chopped

1 can sliced water chestnuts, drained

1 fresh pineapple or a can of pineapple chunks

2 cups of coconut, toasted

sliced almonds

cheddar cheese

rice noodles

gravy

You layer it.  I love all of it on mine.  Start with Rice, then top with chicken.

Layer with all of the fruit, veggies, and nuts.

Then top with the cheese.

Pour hot gravy over the cheese.

Then top with Rice Noodles.

This looks like something my husband would really enjoy. He loves anything with pineapple in it. Thanks for sharing. Great photos!
