Tomatoe Pie with Sweet Jeanette

Hey there!   I’m so glad Cheri allowed me to spend some time with
you all!  I’m Jeanette from SweetJeanette.  Cheri
and I live in the same state, though we’ve never met in real life, I’m happy
to say we share a virtual friendship so I was excited when she asked if
I’d like to be her guest today!  
I hope y’all like tomatoes.  I love when tomatoes are in season. 
My sister, mom, cousins (and whoever else wants to go) all pack in the
car and go picking.  Honestly, we can turn anything into
a party!  This year we were particularly fortunate.  We scored
tomatoes $1.00 a bucket!  No kidding!  I’m talking those 5-gallon
size buckets too!  Needless to say, I had an abundance. But fresh
tomatoes do have a shelf life and I needed to do
something with mine.  That’s where the Tomato Pie comes in.
Are you saying to yourself:  “Tomato?  Pie?  Ick!” 
Yeah, I did too when I first heard of it.  About eight years ago I was
hosting a Christmas Party and my friend called to say she was going to
bring  Tomato Pie and that she was going to bring FOUR pies. 
Being a good southern girl, I wouldn’t dare tell her what I was
thinking, so I said that would be fine.  All the while
thinking, Honey, we’ll be lucky if they finish one.  We just
couldn’t hurt her feelings.   Bless her heart.   Well…
long story short (oh wait, too late for that), that pie was the hit of
the party!  Everybody, and I mean men too, went back for seconds. 
My husband even had thirds!
By now, you’re probably thinking “enough already!  Let’s get to the
pie”  And, if you’re Southern, you’re probably thinking “She could talk
the horns off a billy goat.  Bless her heart”  so I’d better start
sharing the recipe before I wear out my welcome.
You’re going to
need:
 
1 deep dish pie shell (I tried Walmart’s generic brand instead of the
expensive one I usually get, and it’s really flaky! I like
it
!)
tomatoes
sweet basil
salt and pepper
1 chopped onion (recipe says small, but I never pay attention to that- we
like ’em so you just go on and use however much you want) 
1 cup cheddar cheese
1 cup mayonnaise (Now don’t you go and hyperventilate over this.
You’re not going to eat the whole pie in one sitting, are
you?)
Bake pie shell until almost done.
Slice tomatoes thickly. Completely cover the bottom of the pie
shell.
Add salt and pepper.
Cover with onions, sprinkle basil.
Mix cheese and mayonnaise; spread ove pie.
Bake until hot and bubbly at 350 degrees. (approximately 20 minutes)
 
Tah-Dah!   Yes, that piece missing was mine.  Another
good-girl-southernism:  There will  always be a small piece
missing – you may not see it but trust me, it’s gone.  C’mon, you gotta
test it to see if it’s “fit to eat”.

Sounds and looks delish!!!! Can’t wait til my tomatoes in the garden come in and I can make some of these! Thanks for sharing.

This looks so good. I picked up some home grown tomatoes at a road side stand yesterday and I am making this today.
