Pumpkin Pancakes

We tried a new recipe and I wanted to share it with you.

Pumpkin Pancakes

3 C Aunt Jemima Buttermilk Pancake Mix

1C Canned Pumpkin Puree

2 1/4 C water

2 Tbsp sugar

3 Tbsp cinnamon

Place the pancake mix into a large bowl and make a well in the center. 

In another bowl add in the pumpkin and cinnamon to the well.  Pour in 1 C of  the water and stir till incorporated together.

Begin adding the dry mix to the pumpkin, add in another 1 C of water.

**Depending on how wet the pumpkin is will determine if you need to add the additional 1/4 C of water.  You want a pancake batter consistency.  Leave it for 5 minutes while you warm up your griddle.  You can use a skillet but I prefer the gridle because I don’t have to use any oil to cook the pancakes.)  Check your batter to see if it needs more water.

Cook on the griddle.  Butter each pancake while hot.  Serve with warm syrup.
