Do you have those recipes that you always have for the Holidays? I love traditions but I love trying some new things as well.
Here are a couple of our favorites.
Cranberry Salad
1-16 oz can WHOLE cranberry sauce
1-20 oz can crushed pineapple
1-11 oz can mandarin oranges
1 pkg cherry jell-o
1/2 Cup chopped pecans
~~~~~~
Drain the pineapple juice and place in a saucepan. Pour the cherry jell-o into the pineapple juice, cook about 2 minutes until it is dissolved. Now add the whole cranberry sauce to the heated mixture and dissolve that. Stir in the pineapple, oranges and chopped pecans. Pour into an 8×8 dish or a pretty bowl and chill.
*****
Cranberry, Apple, Sausage Stuffing
1 box of chicken stuffing
3/4 Tbsp Butter
3/4 Cup water
1 Gala Apple, cored, sliced and chopped
1 Cup of Craisins
1 stalk of celery, chopped
1/2 of a large onion, chopped
1 pkg of mild sausage (breakfast style)
1 tsp parsley
1 tsp sage
1/2 Cup pecans, chopped
Cook and drain the sausage and then set aside. In a frying pan put your butter, apple, craisins, celery, and onion and saute’ til soft and a little golden. Add in the water, seasonings and pecans and continue cooking a couple more minutes. Add in the box/bag of stuffing and cook for 5 minutes.
Spread the mixture out onto a jelly roll pan and cook at 350 degrees for 15 minutes.
I will also make my mother-in-laws famous homemade rolls, an old family recipe–Cocnut Pie. It is similar to a pecan pie but with coconut–one of our favs.
