Our Favorite Pie-Coconut

This Coconut Pie is almost like a pecan pie. It is so yummy. I have been chatting on facebook (Cheri Childers Peoples) today and showed a picture of this pie and had a request for the recipe.

Coconut Pie

  • 1 Stick of Butter
  • 1 1/4 Cups Sugar
  • 2 Tablespoons Karo syrup
  • 2 tsp of lemon (or you can use vinegar
  • 1/4 Cup milk
  • 1 teasponn of vanilla
  • 3 eggs beaten
  • 1/2 bag of coconut

 

Pie Crust–see recipe below

 

Melt the butter.  Add in the sugar, Karo Syrup and lemon and set it aside to cool.  Beat the eggs.  Add the milk and vanilla to the butter mixture.  Then add in the eggs.  (You want the butter mixture to be cool enough so the eggs do not cook.)  Now stir in the coconut and pour into the prepared pie crust and bale at 350 degrees for 45 min.

 

Pie Crust

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup PLUS 1 & 1/2 Tablespoons of shortening, chilled
  • 3 tablespoons ice water

Mix the flour and salt.  Cut in the shortening with a pastry blender until the particles are pea size.  Sprinkle water over the dough 1 Tablespoon at a time.  Gather the dough so it cleans the sides of the bowl.  Form the dough into a ball.  Turn the dough out onto a floured surface.  Roll it into a circle so it is a little bigger than your pie pan.  ***Never stretch dough it causes shrinkage.  Place the dough into the pie pan.  Pour your coconut pie custard into the pie shell and Bake.

Thanks so much for sharing this! My grandmother and one of my aunts used to make this pie but I cannot find the recipe. It’s a winner for sure!

How in the world are you making all these pies, decorating a huge Christmas tree, taking care of 4 kids and who knows what else?? What kind of vitamins are you on? 🙂
