
Copy Cat Chips
I am not on a diet. I am on a lifestyle change. Who would have thought dinner could be so yummy and satisfying?
I made a lean hamburger and added a wedge of laughing cow cheese on top (while it was in the pan–so it warmed up a little).
I did not have a bun. I ate my cheeseburger with a fork.
I had a yummy spicy dill pickle on the side.
…and what about those chips…are they a healthy choice?
Well, yes they are. I made Kale chips. A recipe my friend from college shared with me.
They were really yummy.
- 4 Cups of Kale
- 1 Tbsp EVOO
- sprinkle of salt
- I bought a bag of Kale, all chopped up for me in the veggie section of the store.
- I added 1 Tbsp of EVOO to my pan and tossed in 4 Cups of Kale.
- I cooked it over medium high heat. I tossed and tossed until it was completely coated and was starting to get just a little tender.
- I sprinkled a tiny bit of salt on them.
- Then I tossed them onto a jelly roll pan and tossed them into the oven.
- Bake them at 350 degrees for 15-20 minutes (depending on your oven).
- They get crispy and you feel like you are having some chips with your burger.
Do not over cook them or they will taste chard. (hmmm I wonder how I know this)
When you are needing something crunchy and healthy go for these Kale Chips! They were very good!!

Don’t over cook it. My first batch I left in the oven to warm while my burgers finished and they were over done so I hurried and whipped up another batch and they were much better.
